In its traditional dishes, which are renowned for their perfect balance of flavors, China uses an infinite variety of meats, vegetables and spices. The vastness of this empire has given rise to various culinary arts, which depend greatly on the region. They are adapted to the climates of those regions that divide the territory into four parts: Canton, the Northeast region, Sichuan and the Shanghai region.

Canton uses a variety of natural ingredients, which are sautéed or steamed. This southern region regularly flavors its dishes with ginger or soy sauce. Cantonese cuisine is the best known in Western countries, where it is considered to be the best in China.

The Northeast region, where the capital of Beijing is located, has a harsher climate but boasts delicious dishes, such as the famous Peking duck. The cuisine of Beijing was formerly called 'Mandarin cuisine' or 'imperial cuisine' and it is, indeed, in the capital where you can find the famous Forbidden City and the home of the Emperors.

In Sichuan, in the center of the country, the food is hotter and spicier. Sichuan pepper, which is a slightly lemony spice, is used in almost all of the region's dishes. The high consumption of chili suits the hot and humid climate of the region.

In the region of the megacity of Shanghai, the ingredients are slowly braised to create delectable dishes of fresh meat and fish. Sugar is added in large quantities but you cannot really notice it. The dishes flavored with sweet and sour sauce are the stuff of legend.

Take a look at the book description and You know a lot of what is waiting for You.
Explanations about the different Chinese cuisines make it easy to chose: You want sweet and sour? More Cantonese. You like it hot? Sichuan does it for You!

Take a look into the book and You will find the contents in alphabetical order. So if You like almonds - easy, isn't it?

I'm a beginning wok user and found this book a good place to begin getting past the basics. I bought the Kindle version and have been very happy with it! Nice price, too.

This is definitely a wide-ranging book of recipes. If you like Chinese food, I can't imagine that you won't find something in here to make. I was surprised at how many familiar recipes are in this book. You could pretty much satisfy any chinese takeout craving by opening this book! Love, love the variety here. Also the recipes are written so that dishes appearing to be complex and difficult, are easy to make with minimal effort and skill required. If you can chop vegetables and meat, and can reasonably use a skillet, you should have no trouble making these dishes.

The photos are great, and I appreciated how many and the quality. It was nice being able to visualize a dish whose ingredients seemed very intriguing, and then to see it illustrated. It added another element of value to a book that I already found enjoyable.

Like most ebooks it has a lot of spelling/format errors, but I dare you to notice or care!

Definitely a recommendation. The recipes are easily adaptable to any style of eating. Worth every cent!

I have always been fascinated by Chinese culture and cuisine. My family and I love Chinese food, and I have been wanting to prepare it in our home more often. To me, there has always been a bit of mystery associated with Chinese cuisine. I finished reading this book this morning, and a lot of the mystery has been cleared up for me.

With 101 recipes, there are sure to be some recipes that will appeal to even the hardest to please devotee of Chinese food.

The active table of contents lists the recipes in alphabetical order. The dishes contain a variety of meats (lamb, chicken, pork, beef, seafood) as well as some vegetarian offerings.

I confess that I am only a little better than a novice cook, so some of these recipes intimidate me a bit. However, I think as I grow more confident with my cooking skills, I'll be able to tackle some of the more difficult dishes. This is not to say that there aren't lots of simple dishes (there are plenty).

The flavors are fresh and bold and they incorporate a wide variety of sauces. One thing that I found interesting on a personal note is that the Shrimp in Lobster Sauce recipe does not contain lobster. When I was growing up, this dish was a family favorite at the local Chinese restaurant. While we assumed it did in some way contain lobster... now I kinda think it didn't.

Some of the ingredients are very new to me: Lotus root in various forms (root, root powder, seeds). There are various kinds of exotic mushrooms/fungi (jyo black mushrooms, enoki mushrooms, nami black mushrooms, cloud ears, wood ears) as well as several more main stream mushrooms. The "Assorted Vegetables in a Clear Sauce" calls for something called Tietsin Preserve (I think this is a vegetable preparation). A mixed fruit dish calls for "grass jelly." I am looking forward to exploring these food items that are new to me and I am preparing a list for my next trip to our local farmers market.

One of the desserts that I can't wait to prepare is the "Honey Sponge Cake." I have some baking skills, so I think I can manage this one (in truth though, the cake is steamed). This cake calls for six eggs, the whites of which are used to create the "sponge cake" effect. Also in this book are recipes for Almond Cookies and Chinese Fortune Cookies.

Such favorites as General Tso's Chicken, Egg Drop Soup, Crab Rangoon, Beef with Broccoli, Kung Pao Beef (and Chicken), Egg Rolls, Chicken Foo Young, Sesame Beef, Teriyaki Beef, and Won Tons are just a few of the dishes you can learn to cook.

If you are looking for a foundation cookbook of Chinese recipes, then this book is for you. It has simple directions and there a lots of beautiful color photographs of the food.
