Quite simply, this is my favorite cookbook. I'm from Ireland so there is an element of bias but nevertheless you cannot beat Mrs Allen's simple advice such as how to roast meats properly and how to make the most of the subtle flavours that are inherently Irish. Furthermore, Myrtle Allen wrote beautifully. Her stories are very charming and I enjoy reading a few again each time I am cooking with this book. I can no longer pass a field of buttercups without a smile and a nod to this great woman.

the book has great recipies from the Ireland school of cooking. I have looked up the school on the internet and being a cook my self I was very pleased. the only thing I found wrong was no pictures of the dishes, but the recipies are very easy to understand and be able to use them. so I recommend this book if you want to cook real irish definetly get this book

There are maybe 3 recipes in the whole book I would use. I don't need (or want) to know how to kill shrimp or cook a pig's head. That's one of the biggest problems with buying cook books online. You just don't know what's in them before you buy.

Mrs. Allen is a "tour de force" in a valuable treatise of Irish cookery. Am so proud that Mrs. Allen finally chose to write a book. This appears to be prior to The Ballymaloe Cookery School. Adore the Allen Family and their nonesense approach to Irish Cuisine.The way Irish were treated here in America was abombadial.Just ask Steven Colbert of the "Colbert Report".Dr. Henry Gates, Jr.looked at the "family tree". So maligned as other Ethic Groups.Ireland has Finally come into its Own. More than "ginger haired" people. A real struggle of "class".Yet, Mrs. Allen leaves her anger in the way she uplifts us All by delightfull, delicious recipes. Expect the Irish bread dough to be so "wet"that you must "pour" into a loaf pan.Follow the recipes exact and you are "golden". This is Pure and Filled with Love.As All Books of Cookery Should Be...
