I saw this book and my heart skipped a beat, I was in love. It had the most beautiful color pics, the recipes were lovely, were organized by theme, there was even nutritional info listed on the bottom of each recipe. The measurements were given in both weight and volume, metric and non-metric. Wow, I thought; this book is great. Then, I noticed something missing....none of the recipes indicated what size jars to use or how long to process it. I figured, maybe it's in a separate generic chapter, but it wasn't. And the chapter on any procedures or basic info is not in front of book, it's the LAST chapter in the book, very odd, and that chapter had no information worth printing. I found nothing there to guide me...nothing stating what I should do to actually PROCESS and PRESERVE properly. Love quickly turned to hate. The blackcurrant jam is typical of all of the preserves, it states at the end of the recipe: "Carefully pour the jam into warmed sterilized jars and seal. Leave the jars to cool completely, then label and store them in a cool, dark place.' That's it. No mention of jar size or processing time. I know most jams need 10 mins, but it only states by the ingredient list that it "makes about 4 lbs"...that tells me little of what I need to know to assemble this! Most all else ends with a 3-word instruction to end the recipe with: "seal and label" --that's all...DUH. Same with the chutneys and fruit butters. Jellies and relishes and pickled items: "cover and seal." Perhaps you have to be a super-duper advanced canner to know something I don't, but I have over 8 books on preserving, and none of them leaves this critical info to chance. For all the good things this book offered, this ONE omission is a fatal flaw rendering the book a major disappointment to me. I will not be able to attempt some recipes bc of this, others I can figure out on my own bc I have some canning experience. And for this reason alone, I would never recommend this book for beginners! This book could have been, as they say, a real contender, a 5-star book...but instead, it was a big disappointment and a HUGE opportunity missed! when I bought this in May, it was $13...now it's not even $3 and going cheaper by the day....there's a reason for that!
