Quatrième de couverture

Coffee is, after wheat and sugar, the third most important food commodity – A business worth over 17 billion USD per year and employing some 125 million people worldwide. Written by the leading experts in the trade and endorsed by both the International Coffee Organisation and the Specialty Coffee Organization of America, this is the single most comprehensive, practice–oriented guidebook for coffee professionals, covering the entire value chain from grower to roaster. Following on the success of its predecessor, this second edition now features the impact of coffee production on the environment, the botany, genetics and genomics of coffee and bean quality assessment. On 1,000 pages divided into three distinct parts, forty authors from the leading coffee–growing nations present the latest technologies applied to coffee husbandry, covering methods of coffee cultivation, harvesting, processing, storage, and economics. This scientific handbook is unique in incorporating recent research on the coffee plant, its pests and diseases, biotechnological methods for improving breeds as well as updated primary processing. Last but not least, with more than 800 carefully selected, mainly color illustrations, 160 tables and a 100–page appendix packed with data, this is a universally reliable manual, providing basic guidelines and recommendations for coffee producers, traders and researchers everywhere. --Ce texte fait référence à l'édition Broché .

5.0 étoiles sur 5 Authoritative from Farm to Cup 1 février 2010

I'm a grower, exporter, seller and roaster of coffee from Jinotega, Nicaragua. When I started my farm, my goal was to own the entire supply chain from seed to cup. It was very difficult as I began this journey 4 years ago found it difficult as no one understand the entire scope of seed to cup as most people understand only a narrow segment of each aspect of the industry, such as farming, cupping, retailing, etc. This book encompasses the entire seed to farming, to processing, export, to cup and to eventually retail. It discusses aspects of ecology, sustainability, and new coffee technology. It covers the various processes of coffee horticulture and milling in different parts of the world. I was able to bring ideas from Africa to my farm in Central America. The locals initially were resistant, but seeing it in action quickly changed minds. Through this book I was able to cut my energy cost to a minimum, and also reduce my water usage to only 20 gallons a day for wet miling coffee. I only use 8 workers for a 30 hectare farm. Fertilizer costs also decreased by judicious use and understanding of nutritional needs of the coffee trees. We were able to get premium prices for our coffee as the quality drastically improved. The cup also is excellent with an average score of 80. Love to see it in a kindle. This book is heavy and stained with coffee from the various trips to Central America.

No other coffee book has as much breadth as this one. Moreover, the information is current and most of the chapters are written by respected coffee scientists. I use this coffee book more than any other on my shelf!

Even though the book was designed as a practical guide for coffee growers, the average individual interested in coffee will likely find many chapters useful and interesting. Yes, it is expensive but it is worth it!

5.0 étoiles sur 5 THE reference book for serious coffee industry participants 7 juin 2011

As the title suggests, Wintgens has aggregated a large part of everything worth knowing in coffee growing, processing and production. Comprehensive and still current today, this book is a must have for any coffee industry participant involved in farming, milling, exporting, importing or roasting. It is even useful to cafe owners and baristas - especially if you are in the specialty coffee segment of the industry. It may be a relatively expensive book compared to a paperback novel, but if you're serious about coffee then it's an investment that you won't regret.

I am a coffee grower in El Salvador. Have not yet finished this book, but see great potential and use for this book. Even though the price is a bit high, it is a great resource and contains many great coffee practices from all over the world.

I recommend anyone involved in the coffee producing world to buy this book and add their knowledge to it, if it were possible.

This book is a blessing! It is exactly what I was hoping to find since I knew very little about coffee and wanted to learn a lot about all aspects of the industry.
I purchased the paperback version because is much less expensive than the hardcover and have no problems with it.
It covers all subjects starting from a general view down to every detail making the book an absolute necessity for the beginner as well as the most experienced person.
The book is very well written and easy to understand even in the most technical sections. Pictures, figures, graphs, drawings are abundant throughout the book and are also very informative.
The author has an extensive experience in this field and it shows in each and every chapter. Big pluses are the explanations of problems, causes, solutions, alternatives, and future outlook.
Because this is a magnificent book that can be used as a reference, I would have liked to see larger pictures.
