I'm Cuban and a lot if these recipes have absolutely no resemblance to Cuban cooking. you suggest a substitution of pepperoni instead of chorizo in one recipe. Are you kidding? No way is it the same and no Cuban would use it in cooking. Do your research before you market a book on a subject you obviously know little about.

This book is not for a beginner cook. The instructions are unclear with misspelled words (ie "Seethe until condensed"). How "condensed" (I assume thick) do you want it?
or "Preheat oven to 250 degrees and heat 2-3 inches of oil in a pan to 375 degrees. Line a sheet pan including paper towels. Deep fry croquettes until golden brown." Recipe ends without mentioning what you are supposed to do with the preheated oven.

If I decide to try a recipe, I would first have to rewrite it so that it makes sense and then pray that my interpretation is correct. A recipe book should have clear instructions and preferably a picture of the finished product (no pics in this book). Fortunately the book didn't cost me anything as I borrowed it with the KU program and I will be deleting it. There's just too many other, well written cookbooks to waste my time on this one.

I should have read the reviews before I one-clicked the Kindle edition. But who's going to get upset about it for 99 cents? Nothing all that unusual here, and certainly not the "ultimate guide". I wonder how many Cubans on the island actually use soy milk in their cooking. Also . . . be prepared for some strange translations from Spanish into English. Example: "place garlic, onions and peppers in vegetable oil until tender." I think what this should have stated is "saute" instead of "place" . . . otherwise it could take a few weeks for "tender" to arrive.

There are many confusing directions. I don't know what boil and seethe means. Or take away marinade from refrigerator and allow to cool. Hmm it's in the fridge and should be cool already. Or burn the roast all over or brawl the meat. Still lots of good recipes if you can overlook the mistakes.

This book has some great recipes, but I would not call it "Ultimate". I think that is misleading. I wonder if the writer of the book is Cuban and really does not know how to speak or write good English, because there is some questionable wording in the directions of these recipes. Other than that, I think we can still get some great information out of this book for it does have some excellant recipes. I do not mean to criticize because without this book I never would have thought to try some of the Cuban recipes. So all and all thanks for sharing..
