A nice book on sourdough bread making. I have 20 or 30 books on baking bread. What distinguishes this book from the others is an emphasis on adapting your bread baking to whatever schedule you happen to be on. Whitley focuses exclusively on natural leavening methods (i.e. sourdough) and emphasizes the advantages of such baking methods. Such bread not only tastes superior but because of the slow fermentation process, it's easy to adapt the baking of sourdough bread to nearly any sort of life schedule. For example, if you're not home during the day, you can start a dough in the morning--before you leave for work--and put the dough in the fridge for the bulk fermentation over the course of the day. Take the dough out at night and put in proofing baskets. The bread can then be proofed and baked that evening, or put back in the fridge to proof for the next morning. A book for bread enthusiasts and those committed to cooking and baking methods that produce the healthiest and best tasting food possible.

Having written a simple handbook on sourdough baking, I can only say that this is the book I wish I had written. It covers all the bases in clear and uncomplicated language, contains good recipes, and conveys the author's enthusiasm. Highly to be recommended.
