This book explains some of the origins of Filipino cuisine and the influence of Spanish cooking - not to forget the Chinese and American, all adapted to the original Malaya-Polynesian style. In fact, we learn that nowadays one can find Thai, Japanese, French, Italian and other cuisines influencing Filipino dishes. There is a useful section providing lists of food with local names and international equivalents, The recipes are clear and detailed and some contain fairly unusual ingredients - for the adventurous who really wish to try the exotic! Apart from the many recipes this book supplies information on the history and culture of the Philippines. Really good value.
