I have over 200 cookbooks and I have more of Donna Hay’s cookbooks than any other chef. She never ever disappoints me and I don’t hesitate to purchase her books. With her latest, Fresh and Light, once again she has lived up to all of my expectations.

The recipes are simple and full of flavor and each and every recipe has a gorgeous photo to accompany it. For recipes that lend themselves to variations, six seems to be the magic number. Not just one banana bread recipe but six banana breads – and a photo of each one!

I have already made three of the recipes from the book, loved them all and have marked so many more to try!

The book is divided into 8 sections listed below along with recipes that I’ve tried or marked to try:

Breakfast: Whole Wheat Honey and Ricotta Pancakes, Basic Muffins – with 6 variations, and Power Smoothies – with 6 variations.

Lunch and Salads: Summer Rolls (6 variations – from Chicken and Mint to Beef and Radish), Roasted Brussels Sprout and Pear Salad (which I’ve made and it was fantastic), 6 Bruschetta recipes from Roasted Garlic and Asparagus to Arugula Salmon and Caper.

Fast Dinners: 6 Frittatas – I’ve made the Pea and Ricotta Frittata – so good! I’ve marked to try the Lemon and Goat’s Cheese Roasted Chicken, Thai Green Curry Chicken Skewers with Ginger Quinoa, Lime and Chilli Fish Tacos, 6 no-cook pasta sauces.

Dinners: I’ve made the Quinoa Roasted Chicken with Olive Gremolata which was the perfect one pan weeknight meal! I’ve marked to try the Grilled Steak with Green Salsa and all of the 6 variations of the pizza toppings for the whole wheat pizza base!

Snacks and Sides: Spiced Chickpeas, 6 varieties of humus from Roasted Carrot and Fennel to Edamame and Wasabi, Spiced Quinoa Pilaf and 6 different ways to cook and flavor edamame.

Desserts and Treats: 6 varieties of Granitas, 6 versions of banana breads, and 6 different creamy popsicles, plus a panna cotta recipe I can not wait to try!

Basics: Basics that are parts of other recipes such as whipped vanilla ricotta, vanilla yogurt and 6 salad dressings are all on my list to try.

The book ends with a very extensive glossary and index!

I am a huge fan of Donna Hay. In addition to owning most of her cookbooks, I also subscribe to her magazine and can say this is one of my favorite Donna Hay cookbooks.

The book is divided into seven sections: breakfast, lunch and salads, fast dinners, dinners, snacks and sides, desserts and treat, and basics. So far we have enjoyed the five grain porridge, beetroot salad, quinoa sushi rolls, green curry chicken skewers, grilled steak with green salsa, granita, and pear tart.

Her recipes are simple but truly flavorful and foolproof. What is even better with this cookbook compared to her previous ones is certain basic recipes (ie. muffin, smoothies, summer rolls, bruschetta, frittata, pizza, hummus, banana bread, popsicles, granitas) have six variations so you can switch things up depending on what ingredients you have available in your fridge or pantry.

As always all of the recipes are accompanied with pictures so you can see what the final product should look like. As food bloggers, my husband and I appreciate the simple food styling and beautiful photography. Another great addition to our cookbook library!

I love Donna Hay's cookbooks - I love that there is a picture for each dish (I feast with my eyes). Her classic white plating always accentuates the food. Everything I have ever made from any of her cookbooks is wonderful. I also really appreciate that in several of her books she gives you alternatives to make the same dish with different ingredients - that keeps the whole idea fresh for me. Her instructions are clear and there are never so many ingredients in a dish as to overwhelm any cook. Her books are wonderful no matter what level your cooking skills are.

I have given this as a gift to many people, it is so inspirational. I am a fan of Donna Hay and have most of her books, not one is a dud. I have taught cooking for many years and appreciate the professionally written and tested recipes. Great shower gift, no one has been disappointed
