une grande variété de recettes, une page de conversion des unités de mesure, des petites astuces pour chaque recettes, une rubrique d'aide "si le gateau n'est pas parfait" avec une colonne de problèmes et leurs solutions, cependant le livre manque cruellement de photos, dommage car c'est souvent ce qui donne envie de le realiser.

Junior's is well known for their cheesecakes, which are considered by many to be the best in the world. Located in Brooklyn, it's a must-go for lots of visitors to New York.

So if you're a cheesecake lover, you're going to be thrilled they have a cookbook now, and the book does start with some great cheesecake recipes. Classic New York style to start with, then getting into more complicated cheesecakes. Personally I had to wipe up a little drool after just reading the recipe for the Red Velvet Cheesecake which is a "skyscraper" style cake, 5 inches tall with cake, cheesecake and cream cheese icing. The tiramisu charlotte is a new favorite for my family.

After the cheesecake recipes comes a chapter on soda fountain desserts. Perfect egg creams, orange freeze drinks, milkshakes, malted and ice cream treats. As much as I love cheesecake, this is my favorite chapter. My family loves ice cream, I'm pretty sure if you asked my dad, he would say it's favorite food. This is the chapter for hot sunny days.

Black and Whites covers two-tone desserts that are stylish and tasty. Cheesecakes, cookies, malteds and a couple other recipes. The Oreo Little Fellows look like the perfect cool dessert for my daughter's July birthday.

Layer Cakes and Cupcakes is self explanatory and full of wonderful baked goods. My favorite in this chapter is Grandma's Lemon Loaf. It's plain looking compared to the rest of the desserts, but I love loaf cakes.

Pie Shoppe has whipped cream pies, adorable tartlets and classic pie recipes. Recommended- the Bourbon Sweet Potato Pie.

Save Room For Dessert has recipes that don't fit into the rest of the chapters like blintzes, brownies, cookies and pudding. It even includes a recipe for fried cheesecake.

For Those Watching Their Sugar is where this book becomes very much a favorite for me. I don't have to watch mine, but my uncle is diabetic and I like making him a special treat every so often. With several cheesecake recipes, a muffin recipe and a couple mousse recipes, this one will keep him happy for years.

The last chapter contains instructions for things that are used in several recipes. Crusts, sauces, whipped cream and ganache.

The instructions for the recipes are clear and well written, and there are bits of trivia and tips sprinkled liberally through out the book. The photos are incredible.

The story of Junior's dates back to 1895 when Barnett and Sarah Rosen relocated from the Ukraine to a lower east side tenement building in Manhattan. Junior's founder, Herschel Rosen was born in 1904. The Rosen family was very resourceful and after saving $1500 bought into partnership with a local luncheonette. In the 1920s, Herschel, who went by Harry, opened a Enduro Sandwich Shop in the area of DeKalb and Flatbush in Brooklyn. The family business endured financial crisis such as the crash of 1929, but came back stronger than ever in the early 1930s. Junior's opened on November 7, 1950, Election Day, and began a New York tradition. Today, in addition to being known for its great foods and great service, Junior's is known for its amazing desserts and famous cheesecake.

Junior's Dessert Cookbook is filled with decadent recipes like "be mine" valentine cheesecake, red velvet cheesecake, Junior's orange freeze, Junior's mud pie and chocolate ganache. The book also has recipes for diabetics or those looking for sugar free desserts. The cookbook has recipes for cooking basics like piecrusts and whipped topping. In addition, as if this cookbook couldn't be any more awesome, the end of the cookbook has a trouble shooting section. The troubleshooter answers questions and provides solutions to fallen cakes, sticky dough and curdled custard. This is great cookbooks has many recipes that I will be trying very soon!

Junior's restaurants in New York are known for great food and delicious cheesecakes. Junior's Dessert Cookbook contains 75 recipes including their famous cheesecakes, layered cakes, and pies. The chapter on the basics includes sauces, buttercreams, and decorations for the different desserts. And if you become stuck or there is a problem with the baked items, the table at the back of the book lists probable causes and how to fix it next time around.

Chapters include recipes for all their favorites: Junior's Famous Cheesecakes; Fabulous Soda Fountain Desserts; Black & White; Junior's Layer Cakes and Cupcakes; Junior's Pie Shoppe; Save Room for Dessert; For Those Watching Their Sugar; Baker's Basics; What to Do If Your Dessert Is Not Perfect; and Metric Equivalents.

All in all, a good dessert cookbook. Their cheesecakes are the main draw to their menus, and the recipes for them deliver. The recipes stress using quality ingredients, and the many tips encourage successful baking.

I purchased this cookbook for the red velvet cupcake recipe. I just made the frosting and it is delicious!
I am not sure why some people are not happy with the layout of the book. The only thing different in this cookbook from other cookbooks is the frosting or filling or glaze is not on the cake...cupcake...pie....brownie recipe page. all of those recipes on in a section of their own. The recipes are not at all hard to follow. Some are more complicated than others but all are doable and would not take a trained chef to make...create these deserts.
I think this book is a beautfiul easy to follow cookbook. The egg cream and soda recipes are a bonus in my opinion. I look forward to making more luscious goodies from Junior's Desert Cookbook.

Love the detailed instructions. Best butter-cream frosting I've ever made. Held it's shape well when I decorating cupcakes. I'll try adding coffee next time for a mocha flavor.
