So Much Better than Le Creuset's Mini-Cocottes Recipe Book 6 novembre 2012
Par Bohemian Bon Vivant - Publié sur Amazon.com
Format: Relié Achat vérifié
The Le Creuset Mini-Cocotte: 25 Sweet and Savory Recipes has some issues with being thrown together quickly and on the cheap (apparently) as there are numerous complaints on the web that the recipes don't really scale down to make use of Le Creuset's mini-cocottes (even though that's its specific purpose).

I've had better luck with this book, and frankly the selection of recipes is more varied and interesting.

The sections are:

Introduction (hints and tips for cooking in mini-cocottes)
Egg Dishes
Vegetable Dishes
Pasta Dishes
Meat Dishes
Poultry Dishes
Seafood Dishes
Fish Dishes
Cheese Dishes
Sweet Dishes
Index (followed by a conversion table page)

The pictures are also gorgeous, and inspire one to dive right in and get started.

That said, I think this whole mini-cocottes thing is a phase driven by clever marketers, and frankly if you are going to get into it you can do so just as well with these Bia Cordon Bleu Oslo White Porcelain 12-Ounce Ramekin, Set of 4 as you can with mini-cocottes meant to look like little cooking pots from Le Creuset, Staub, and others. (If you need a lid just add tin foil, but these also have 4 more ounces of capacity, which is great because most recipes don't even seem to use the lid and have stuff overflowing out the top anyway.) These are also an elegant shape, and, being white porcelain, go with anything and don't clash in color with the food being prepared in them or around them. Did I also mention you get FOUR of these for the price of ONE of Le Creuset's mini-cocottes? :)

I LOVE my Le Creuset oval and round Dutch ovens, but the mini-cocottes are rather silly, and these Oslo dishes serve the same purpose and look more elegant on the plate (accompanied with a salad and side dish of rice or vegetables or meat or whatever's appropriate. They're also beautiful used for making individual dessersts and pot de creme (for which I use the 6 ounce size instead of the 12 ounce size).

Difficult for American amateur cooks to use. 20 mars 2013

The quantities are mostly given in mL and ounces, which is doable, but it would be nice to have cups as well. The oven settings have to be translated too, but that is just a small annoyance. A lot of the ingredients are not in American English...single cream, prawns, poisson, mange tout, etc. But that can be overcome, too. My low score comes from my disappointment with the ingredients themselves. Many of them are not something I can get without shopping on the internet, substituting, or making from scratch...caster sugar, reblochon cheese, lardon, foie gras, etc. I love cooking international cuisine but not if each recipe is going to take a month of shopping ahead before I can make it. On the plus side, if you like light cream in your food, this book will become your best friend.

Terrible and utterly useless "cookbook" 28 novembre 2014
Par tomatomozzarella - Publié sur Amazon.com

This cookbook is a joke. The titles of the chapters seemed promising enough; I was looking to try to cook something beyond variants of eggs (oeufs cocotte) which is what I usually cook in the small cocottes. But in this book, most recipes seem to be just regular recipes, with the author somehow pretending like you can cram all those ingredients in those small pans. (Pork ribs with caramelized potatoes? bouillabaisse? please... you can only fit about two prawns and a clam in those things...) You'd think you'd be better off trying them in bigger dishes, but the recipes themselves are confusing, not precise and they are not explained very well either.
Some of them are not even recipes! Let me share an example among many found in the vegetable cocottes section: "The automnal: This mini cocotte of artichokes, chestnuts and potatoes goes perfectly with a roast chicken or game bird. For winter, spring and summer, improvise with other ingredients." That's it. I'm not kidding. That's it.
WHAT? where's the recipe? Am I supposed to use artichoke hearts? how do I cook them? for how long? I guess if I want to make this, I'd better call my aunt or google it. And "improvise" (!!!!!) like the author suggests. There's a lot of stuff like this in this book, making it completely useless to me.
The dessert section is a little better than the rest, but it only contains 6 recipes and most of them aren't anything special.
I absolutely do not recommend this cookbook.

Not that Many Useful Recipes 23 juin 2014
Par Bonnie315 - Publié sur Amazon.com

I didn't find that many useful recipes in this book, and frankly, I think many of them are just attempts to jam standard recipes into smaller vessels. Some of the recipes do not seem well adapted for cocotte cooking.

I was hoping to get some really good recipes for my little cocottes, but not crazy about most of the recipes. *:(
