Classic Potato Salad
4 pounds russet potatoes (about 8 medium)
Coarse salt
3 tablespoons cider vinegar
3 large eggs
1 cup mayonnaise
½ teaspoon celery seeds
1 teaspoon dry mustard powder
½ teaspoon freshly ground pepper
3 celery stalks, cut into 1/4-inch dice
1 small onion, cut into 1/4-inch dice
10 cornichons, cut into 1/4-inch dice
3 scallions, trimmed and thinly sliced
2 tablespoons coarsely chopped fresh flat-leaf parsley
1 teaspoon sweet paprika
1. In a large saucepan, cover potatoes with water by several inches. Bring to a boil, then add 1 tablespoon salt. Reduce heat and gently boil until potatoes are tender when pierced with the tip of a sharp knife, about 25 minutes. Drain. Peel potatoes while still hot, using paper towels to protect hands; cut into 1-inch pieces. Transfer potatoes to a bowl and drizzle with vinegar; let cool.
2. Place eggs in a small saucepan; fill with enough cold water to cover by 1 inch. Bring to a boil; turn off heat. Cover; let stand 11 minutes. Transfer to a bowl and cover with cold water; let cool and peel. Cut 2 eggs into ¼-inch dice. Slice remaining egg into ¼-inch- thick rounds; reserve for garnish.
3. Combine diced eggs, mayonnaise, celery seeds, and dry mustard in a large bowl; season with salt and pepper, and whisk to combine. Stir in potatoes, celery, onion, cornichons, scallions, and parsley. Refrigerate at least 30 minutes or up to 1 day. Just before serving, garnish with paprika and egg rounds.
Serves 10 to 12

I couldn't wait to get my hands on this book but I ended up being very disappointed since most of the recipes in this book have already been published in Martha Stewart Living and other books of hers... If you own most of her books, there's no point in buying this one.

An absolutely gorgeous cookbook-full of beautiful photography (every recipe has an accompanying photograph) and surprisingly simple recipes, many of which have been culled from Martha's extensive archives. What makes this new book special is the clustering of recipes into geographic regions: Northeast, South, Midwest, Southwest, and West. The book begins, however, with a collection of recipes labeled "All-American" featuring recipes that are part of every American-food lover's list of favorites: Blueberry Pancakes, Meatloaf, Lasagna, Green Bean Casserole, Brownies-and so on. As a resident of California, I recognize many of the recipes from the West, but as a former resident of Texas, I look forward to revisiting the recipes of the Southwest. This book would be a great gift for anyone just starting to live on his/her own, providing them with a basic repertoire of American classics.

I've had this cookbook less than a week and have already made 5 of the recipes - they just get better and better. The pound cake is wonderful (even though it calls for 9 eggs). The tomato soup is delicious. Best brownies I've ever made. Terrific muffins and applesauce everyone raved over. Can't wait to make something else. Highly recommend this cookbook.

This book is just wonderful. It's divided into six sections: All-American, Northeast, South, Midwest, Southwest, and West. The first section features classic American dishes such as potato salad, roast turkey, and apple pie. As another reviewer mentioned, these recipes are perfect for when you need to "bring something" to a potluck. The rest of the sections are filled with classic regional dishes, streamlined for the home kitchen. Most of the recipes feature entertaining "back stories" detailing the history of the dish. These insights--combined with the spotlight on regional ingredients (from Maine's blueberries to Alaska's salmon)--make this book feel like a love letter to classic American cooking. Even where updates and substitutions have been made, the spirit of the original recipes has been preserved, not reinvented.

So far I have made the mashed potatoes (All-American), chicken fried steak with gravy (Southwest), pecan cheese ball (Midwest), and buckeyes (Midwest). All were easy to prepare and used ingredients that were readily available to me (many already in my pantry). And they were delicious! The pictures accompanying each recipe are a nice bonus, particularly for some of the regional dishes that I've never seen before.

If I have one complaint it would be that there seem to be a disproportionately large number of seafood recipes. Living in Kansas, high-quality fresh seafood can be very difficult to find. But it's good to know that if I ever do come across some of these ingredients in my local grocery store, there will be a simple, reliable recipe waiting for me at home.

I was prepared to not like this book, given all the negative feedback from food blogs on Martha's recipes not being reliable and mostly untested before publishing (I'm talking about talks that happened a few years ago). But I was pleasantly surprised. I loved reading the cookbook as a book first with all of the back stories. This is how I came to know what blue crabs really are(crabs before they grown a hard shell!). After enjoying the book as a read, I started cooking from it and some of the recipes have already become staples at my house. I'm not a person who likes to cook a recipe more than once unless it's exceptionally good(or exceptionally easy while still being extremely tasty!), and this cookbook provided me with quite a few recipes I've used over and over again. I've made the blueberry pancakes, mashed potatoes, philadelphia cheesesteak sandwiches, green goddess dressing and many others. I highly recommend this book for cooks looking for a solid collection of all american recipes.

This book is contains a picture for every recipe which I really appreciate. There are many classic dishes that I can see myself referring back to time and time again. Some of these recipes were included in past MSL publications , but I enjoy having this consolidated volume to reference when I feel like good old American comfort food. Definitely a worthwhile purchase as it is useful and beautiful.
