Ruby Cooper once again has gone out of her way to deliver a definitive book on THE MEDITERRANEAN DIET. In her Introduction she reiterates what many of us have heard, but not as clearly as Ruby states it: `You can never get bored of this kind of diet because it doesn't restrict any food. It only restricts large amounts of fat, sugars and unhealthy eating habits. You are free to eat fresh fruits and vegetables, olive oil, lean meat, nuts, dried fruits, seafood and even dairy products if they come in small quantities.....The Mediterranean diet is based on recipes and foods found mostly on the coast of the Mediterranean Sea. Italy, Greece, Spain, Morocco, Egypt and Turkey have always had an interesting cuisine and many studies conducted in the last few years have shown that the people living in those countries face fewer heart problems, less obesity and they don't struggle with bad cholesterol or diabetes as much as people with other diets do.'

From there she proceeds to jump into the best ingredients and follows that with some of the beautifully photographed and described recipes for Mediterranean cuisine. For ease of use our chef divides her recipes into groups that span the days meals. To give you an idea the following are examples of what you will find: Breakfast Recipes - Feta and Tomato Eggs, Lentil Quick Stew, Fasolada - Mediterranean Beans, Artichoke Omelet, Spinach and Feta Cheese Omelet: Lunch and Dinner Recipes - Marinated Fish, Lentil "Meatballs", Zucchini Fritters, Rice and Cabbage Stew, Stuffed Vine Leaves, Beet and Swiss Chard Stew, Spinach Rice Sausage Stew, Dill Pea Stew, Moussaka, Octopus Pasta: Soups - Revithia - Chickpea Soup, Mediterranean Vegetarian Soup, Greek Lentil Soup with Feta Cheese, Polisporo Soup - Seed Soup, Mediterranean Egg Drop Soup, Cold Yogurt Soup: Salad Recipes - Tomato Salad on Whole Wheat Bread, Mediterranean Tofu Salad, Cabbage and Carrot Salad, Herbed Lettuce Salad, Greek Roasted Pepper Salad: Snack Recipes - Feta Cream Cheese, Potato Dip, Tzatziki - Greek Sauce, Eggplant Dip, Bread and Caviar Dip, Spanakopita - Spinach Pie: Dessert Recipes - Honey Fritters, Baklava, Creamy Custard Cake, Fried Pastry Dough with Honey, Whipped Cream Kataifi, Honey Baked Figs with Yogurt, Tahinopita - Tahini Paste Cake. Each of these recipes (and there are many, many more) is accompanied by easy to follow preparation guides and instructions and a color photograph of each completed dish.

As Ruby Cooper states, `Cooking Mediterranean is not hard at all if you keep in mind a few rules: fresh ingredients, good quality olive oil, aromatic herbs and lean meat, plus plenty of seafood. I really liked reading the Mediterranean Diet book. It is very informative and helpful in giving out good common sense nutritional information. I have not tried any of the recipes in the book yet, but I plan to in the future. I have been eating a "Mediterranean style" diet for the past year and I have lost 20 pounds and feel better. I do not cook a lot of fancy gourmet meals, but I cook very simple meals made from natural ingredients. I avoid fast food and highly processed food as much as possible. I eat more fresh fruits, veggies, whole grain cereals and good quality fish and chicken. I use extra-virgin olive oil in most of my cooking and limit my intake of sugar and processed sweets. Most of my snacks and "desserts" consist of fruit, plain yogurt, olives, nuts and other natural foods. I feel much better since I stopped eating all the processed fast food junk loaded with chemicals.

This book has some nice recipes but there is some obvious information missing. There are no page numbers or table of contents so you must leaf through the book every time you want to find that recipe. Also, there is a recipe for something called "Spinach Roll" but nowhere is spinach listed in the ingredients (obviously a typo) and it makes me wonder if ingredients were left out of other recipes. This is a good cookbook which probably needs another editing before it goes to print

This book is perfect for the quick understanding of the Mediterranean Diet. The accompanying pictures are colorful, increasing recognition and mental association with the information. The book is easy to follow - you don't have to slog through it to locate what you're looking for. The recipes we have tried are simple but really tasty.

The book approaches the implementation of the diet realistically - recognizing that most people work and "have a life", so suggestions keep with the tenets of the regimen, but the ingredients are those that are readily available.

There were many choices offered for Mediterranean Diet Cookbooks, but I'm really glad I chose this one as an introduction, for it's simplicity but also for it's conciseness.

I chose this book because of the variety of recipes. It has soups, snacks, sandwiches, entrees, and more. The recipes are in large print, easy to follow, and you don't have to fill your pantry with multiple ingredients that you seldom use. I am particularly fond of photos, this book has so many great attributes that it doesn't limit its use.
