Pancakes were something I never dared try for fear they'd come out either raw or burnt. I picked up this book because the cover and recipes were irresistible. It started a minor revolution at my house, and we now have a tradition of Saturday morning pancakes.
Dorie Greenspan patiently describes ingredients, techniques, and equipment (nothing scary here). The recipes are divided into three sections, suitable for breakfast, brunch, and dinner. All of the breakfast ones I've tried are wonderfully sweet and moist -- I eat them without any topping. Our favorites include the simple cornmeal pancakes, cottage cheese pancakes, and the luxurious, light, lemon and ricotta pancakes.
The brunch and dinner pancake recipes are adventurous, with spicy and unusual ingredients. I haven't been interested enough to try any. But the book is worth it for the clear instructions and delicious breakfast pancakes.

It takes a lot to get a 5 star review out of me, especially where a cookbook is concerned. I've tried the recipes in this. They are foolproof. Both dependable mainstays and creative twists. It's the penultimate on the subject. Why is this book out of print??? Someone should seriously fix that. If you can get your hands on a reasonably priced copy, do it. Now.

Let me be clear. I do not cook. I prepare food for the family so we will not starve. But with this book I can make breakfast fit for a specialty brunch café. Instructions are very clear and easy to follow and the results are always delicious. I admit, I've owned it for years and have only tried about 6 recipes, but every time I open it I remember how good those were and go back. This morning I finally tried a new one, the Four Season's Lemon Ricotta Hotcakes. I was a bit intimidated by the origin of the recipe, but they were delightful! This book is perfect if your family (like mine) loves pancakes or if you just want to try something extra special for breakfast (although she includes many non-breakfast recipes, including many savory preparations).

I bought this companion volume to Dorie Greenspan's waffle book and it is jam packed with interesting recipes. I own all of Dorie's books and none have ever let me down. now,let me at those buttermilk pancakes!

I've owned this book since it was first published, almost 20 years. My Dad made pancakes every Sunday morning when I was growing up, and I wanted to continue the tradition in my own home. I have so many recipes and books on breakfast in my collection, but this is the book I grab when I want pancakes - I see no need to try any other recipes, because every type of pancake you could ever want is right in this book, and they are all delicious and easy to make.

I love that there are so many options - buttermilk, cornmeal, mult-grain, cottage cheese, fruit, oatmeal, ricotta. My favorite breakfast pancakes of hers is probably the buttermilk and the apple-walnut, although I really love them all. She also includes a special topping - a jam, a fruit syrup or fruit butter - for each kind of pancake. You don't have to make them - the pancakes are still delicious - but they are doubly good with her toppings. I admit I've never tried the dessert pancakes - I usually refer to her companion book, Waffles from Morning to Midnight, for a quick dessert, but I can attest that all of the breakfast and dinner pancakes - especially the potato pancakes and the zucchini pancakes - are delicious, because I've made them all.

Like the Waffle book, everything is easy - no complicated technique, no complicated ingredients or equipment. ANYone - even someone who thinks they can't cook - can make good pancakes with this book. My son even learned to make pancakes using this book, and takes the "Breakfast quickies" recipe with him when he goes camping!

My only complaint is that the books is now out of print - I wish the publisher would re-print both books again so that more people could purchase it. It is a must have for any kitchen, IMO.
