"Plancha" is a Spanish word that literally translates as “plate,” and refers to both a style and a method of cooking, using a metal slab heated over a gas flame. In Spain, planchas are widely used in tapas bars and restaurants to cook an incredible assortment of foods, from mussels to mushrooms and even desserts. In private homes, planchas are often installed in the middle of round tables, so that both the hosts and their guests can share in the cooking experience and no one is stuck in the kitchen. Prepared both indoors and out, plancha cooking is as delicious and suitable on a warm sunny day as it is on a chilly night.

The popularity of plancha has even crossed the Spanish border into France, where many noted chefs, such as Alain Ducasse and Paul Bocuse, have adopted this way of cooking in their Paris restaurants. It’s not just for the gourmet restaurants, however: planchas are incredibly easy to use over grills and stoves, with little mess. And--unlike with other methods of grilling--there is no chance of watching your meal go up in flames.

In Plancha, Liliane Otal shows how to buy and maintain a plancha as well has how to make more than 150 delicious recipes that are so simple and fast anyone can do them. The cooking time for nearly all of these recipes is under 20 minutes. Her recipes will show you how to prepare delicious and flavorful meals that are also low in fat.

I ordered this before it was published on my IPad. It is a great both for summer and fast cooking. I bought the griddle and this book for me, my daughter and as a wedding gift. I had been in Spain for a couple of months and this griddle is is really is really used outside on a BBQ. This book has recipes for how to use it, how long to cook items, and many marinades and sauces.

"Plancha: 150 Great Recipes for Spanish-style Grilling" by Liliane Otal ($21, Surrey Books, 176 pp.) is about a method that makes use of a metal slab heated over an flame. You and I may call this a flat-top and further point out that you can find one of these in every Waffle House, but this book focuses on the Spanish use of creating great grilled dishes from the plancha.
This book is pretty straightforward. After a brief introduction that brings the reader up to speed on a Spanish plancha (and why it is different from that Waffle House flat-top), the book goes right to the recipes. While most of the selections have full-color pictures of a finished dish, the pages are just the recipes themselves. No stories, no explanations on techniques, no sidebars (although some recipes do include a line titled Serving Suggestion with some supporting information). But it doesn't matter because cooking on the plancha isn't overly complex by any means. The emphasis is on ingredients over complicated techniques. After the introduction, the book has chapters on Sauces and Marinades, First Courses and Vegetables, Fish and Seafood, Meat, Poultry and Desserts. And that's it. It's so to the point that maybe it should have had a page that says, "Now go get a plancha" so that a surprised reader doesn't wonder what to do next after such an abrupt finish.
Speaking of that, a true plancha may be a bit difficult to find. Certainly anything can be found online if you're willing to pay the shipping from Timbuktu, but be forewarned that you might not be able to walk into your local big box discount store and find a plancha on the shelf. But when you browse these recipes and see the pics, you'll have plenty of inspiration to go looking for your own plancha.

What an awesome cookbook! The recipes are easy to follow and the photos help to envision the end result. This book is a lucky find for those, who are reluctant to try Spanish foods. The pictures will make you drool, they look so delish. I can't wait to try a dish or two or all. Get this book while it's free!

It is difficult to use this book because of the poor formatting. I think as a paper book it would be good, but as an e-book it is not easy to use.
