My mother came to visit our family last year and brought us a bag of quinoa, extolling it's numerous virtues. While she was here, she prepared it once, but after her departure, it has languished on the shelf because I haven't known what exactly I should use it for. When Dee reached out to me for an honest review of her book, I was more than happy to check it out.

The recipes are as simple or complicated as you want and range from salad to a truffle dish. There is something for every taste, and every level of cook. I am now looking forward to incorporating this healthy staple in my diet in a several creative ways!

Highly recommended!

Dee Wallace finally places before us a recipe book that focuses on Quinoa, that frequently mentioned by nutritionists substance that too few people really understand. Our chef author takes care of that information, too: `Quinoa is native to South America. It has been cultivated there for over 5000 years and now it is only just beginning to be a part of our diet. Sacred grain of the Incas, the plant can reach 1-2 meter high and produces several small grains (2 mm diameter). Quinoa is eaten as a cereal, but is botanically the fruit of a plant of the same family as spinach and beets. It therefore falls into the category of pseudo-grains, like buckwheat. The grain that is most often found on the market is yellowish.' She adds much more information than this of course and even presents the drawback of quinoa containing saponins - substances that interfere with the absorption and utilization by the body of important nutrients that substance is easily removed before the markets place quinoa on the shelves simply by washing it. She further informs us about the uses of quinoa - it replaces most cereals.

After this thorough presentation and further tips on purchasing, where to find quinoa etc she launches into her recipes. For each recipe she offers a photograph of the finished product, the ingredients, directions on how to prepare and how many each recipe will serve. And the recipes included are as follows:

I've been trying to incorporate more quinoa into my diet, and this book packs in many recipes! I can't wait to put these to good use...one tip is to buy a fine mesh strainer to rinse the quinoa before and after being cooked. It helps take away some of the grainy taste, and the fine mesh makes sure nothing slips through!

Who would have thought - quinoa and chocolate! Just one of many very interesting recipes, many suitable for vegetarians like me. Most of the recipes seem fairly straightforward and have very nice combinations of quinoa and veggies or fruit. Salads, soups, patties, deserts, and more to delight. Thanks for a fresh insight into quinoa.
