This cookbook is a wonderful source of recipes for all that kale, arugula, chard and spinach that volunteered in your garden or you overplanted. There are dozens of home-style salads, soups, pasta sauces, and appetizers, all made with various (often interchangeable) greens. The recipes are mostly simple and quick to fix. The authors are chefs and have a good sense of what herbs and spices to use in each dish. I've had the cookbook for about twenty years and I turn to it in late fall and early spring when greens are the only fresh veggie in the garden.
