I have a passion for authentic regional quisine, so often when we eat out, what you get served under the name of "Mexican", "Chinese" or whatever does not bear much resemblance to the actual cuisine eaten in those countries. Here in Australia, most Mex is just heaps of meat, tasteless beans and stale salad drowned in too-salty salsa and tonnes of cheese! Very heavy and fatty.

Compared to that scenario, Jane Milton's "Practical Encyclopedia of Mexican Cooking" is a revelation! There are plenty of easy to follow, simple recipes with great photos (so you can tell if your result looks anything like it should). The recipes are also very diverse and represent the broad range of exciting flavours that are Mexican Cuisine.

I have so far tried many of the recipes in this book and have had very enthusiastic responses from dinner guests, surprised at the lightness, freshness and subtle variety of flavours that are part of authentic Mex.

There are lots of hot, cold and alcoholic drink recipes as well to round out your feast.

The part I love most about this book is all the historical information about recipes and foods and how all of that relates to the history of the country itself. For example, I did not know that chocolate originated in Mexico and was taken back to Europe by visitors, or that the Germans introduced the art of beer-making to the country.

The glossary of ingredients if fabulous also, and includes similar historical/ background info.

In summary, this book is very comprhensive, very authentic, thorough and easy to use on a day-today basis!

You may find, as I have, that many of your other cookbooks get dusty on the shelf as you explore the delights of Jane Milton's "Practical Encyclopedia of Mexican Cooking"!!

to any one who cares this book comes in at least two sizes a 9 x 12 inch and 7 x 8.5 inch. The two books are identical but the smaller version has really small pictures(aside from the fill page photos) approx 1 x 1 3/4 inch so browsing by ingredients is more difficult in the smaller version. The smaller version has several pages for "notes" in the back of the book. both are printed on the out side the same as the dust cover. I have made several of the recipes, they were ok, one asked for an ingredient in the directions that was not listed in the ingredients(oil) which was no big deal. 63 pages are intro and about ingredients. 256 pages including the index that you can look up particular ingredients. sections include drinks,desserts, vegetables,fish and shell fish,meat dishes,soups and snacks,and salsas. although the recipes closely resemble Mexican food, i don't think they were made by or reviewed by a Mexican cook. This book uses feta cheese and the <french> cream do frape or what ever. It has a good deal of interesting things to do with common vegetables both hot and cold. There is very little use of beans, i saw two as i just leafed thought quickly. The recipes are named in English such as "caramel custard" instead of "flan" unless there is no English equivalent "churros,sopaipillas" includes directions for cooking beans, refried beans, some thing called "frijoles charros" which is drastically different from "char beans". color on every page it is a pretty book. If you have no fist hand source of Mexican cooking then this book will help you alot, if you do you might be able to recreate the recipes as well as this book.

Well written, concise, and full of information in an easy to read style. This book takes you from the background of Mexican style cooking to preparing your own items following the easy recipes (often fully illustrated). If you are into authentic Mexican style cooking, this is the book for you.

I borrowed this book from my local library, I enjoyed it so much I just had to go online and buy it just an hour after I started reading it. It is so easy to follow, and I like how it has historical explanations as to why certain dishes have the ingredients they do. Also, a MUST for me is pictures :) I cannot tell you how much it means to me that each recipe has a picture to follow along. Obviously, if I need the help of a cookbook, I will need pictures. Another thing I enjoyed about this book is the authentic cooking style. I am Mexican, and I needed a recipe book that would help me recreate those dishes that would remind me of my mothers cooking, and I was very happy to see how I found just that in this great book. I can't say enough about it, I'm very happy I came across this book.

this is a keeper! from the basic to the complex this is a great cook book. Includes background of the dishes.
if you are experianced or novice cook, this is the book for you.
