Having actually lived in Turkey for a number of years, (and missing the foods here in North America) I was so delighted to download this as most Turkish cookbooks are quite complex & not exactly cheap & not always made for the non-Turkish kitchen & grocery stores.

But alas, reality has proven that I should have looked at the five star reviews a bit more closely - clearly a few of these reviewers never made any of the dishes, but just skimmed through the text & popped out a pleasant review of the recipes provided & a "delightful" & "informative" review of Turkish culinary culture straight from the author's words. I wonder how much they were paid....

Sarcasm aside, off the bat this morning, I endeavored to make the "Firinda Omelet" - Involving Ricotta, Eggs, Tomato...well..first of all, I want to know, how is it possible that an omelet takes 35 minutes to prepare and cook? Even if you have 5 eggs...that's quite a long time to crack eggs, and slice a tomato...but I moved on. The recipe calls for 1/2 Cup Ricotta cheese..except...the directions do not tell you what to do with the cheese...yes it tells you to mix the eggs with the salt and the cumin powder and the parsley...& then to add it to the pan and let the mechanisms of cooking take place...it even tells me to put the tomatoes on top...but what to do with the cheese...?

My other personal favourite was the "Sujuk and Eggs Fry up". Now, I don't know about you, but I can't find any good Turkish Sujuk in my local grocery stores...so I was expecting a list of spices that I could add to some ground meat to give me the illusion of delicious Sujuk...nope, the author just tells us to "add Sujuk sausage". Really?

There's a few other gems in there that will make you roll your eyes and shake your head. Oh well, it feels cheap & rushed because it is cheap and it was probably rushed. The table of contents didn't work well on my device either, but that might be a result technical wizardry gone wrong.

I didn't pay much for this, but on principal, I'm requesting a refund from amazon.com :)

Thank you for such a beautiful tribute to Turkish culture and cuisine (both go hand in hand). These recipes are very simular to Lebanese recipes that I have collected. However, you take it to the next level, flavor wise. Eggplant is among my most favorite of foods. You have given me so many and versatile ways to create gorgeous dishes that I know my family will love. I must add the fact that you talk about the different spices near the front of the book with pictures and what each tastes like. I really learned a great deal more. You included other Turkish staples as well. This is more than a cookbook. It is like handing us the keys to the kingdom. I am eternally grateful.

Since I used to eat at a Turkish cafe, I had always wanted to learn how to prepare Turkish recipes at home. This cookbook has come to my rescue. In the cookbook it covers everything from common ingredients for Turkish cooking, breakfast meals, salads, main dishes, soups and stews, and desserts.

What I have found is that this book states the staples to have on hand in order to prepare the recipes. These staples are easily found in most grocery stores with the exception of Kaymak (clotted cream), I used cream cheese instead and it worked great, the other staples I found in my local grocery store easily.

The main dishes chapter is my favorite. In this section, Kofka (Turkish Meatballs) are my favorite and perfect on pasta!

If you like Turkish foods or want a unique cookbook, then consider this wonderful cookbook.

Author/chef Bryan Rylee a passion for new cuisine ideas. His travels in search of the exotic in foods has resulted in his living with the Basque people of Spain and France, exploring the Mediterranean coast and deep into the countryside of Turkey where he discovered the Turkish fusion of far eastern tastes and North African culinary treats. His adventures have included the cuisines of Scotland, northern England, the islands of the Caribbean, and Iceland! All of this he is translating into books on the various cuisines he has sampled from his home base in San Francisco. Rylee shares his culinary secrets and discoveries of Turkish cuisine in this collection of 100 very special and unique recipes.

In his Introduction Bryan states `All you need is a bold palate that can stand intense flavors, you need to step out of your comfort zone and try unusual combinations that will prove you how special and delicious the Turkish cuisine is.'
He then proceeds to inform us of the basic common ingredients - olive oil, rice, eggplant, lentils, ground meat (especially lamb), bulgar, cumin, fresh herbs (parsley, dill, cilantro), cinnamon, kaymak (clotted cream), chickpeas, pistachio and walnut, rosewater, pomegranates, sumac, and tomato. From this starting point he takes off with recipes for Breakfasts: (Firenda Omelet - ricotta and tomato, Ymurtali Ispanak - spinach saute with eggs), etc, Hummus and acompaniments, many fantastic Salads: (Domates slatasi - tomato salad), Tabbouleh Salad, Main Dishes: Bulgar Pilaf, Zucchini Moussaka, Kofka, etc, Soups and Stews: Turkish Red Lentil Soup, Toyga Soup (chickpea and yogurt soup), Umak Soup, etc, Desserts: Revani Cake, Pistachio Baklava, Coconut and Pistachio Pudding and on and on.

As our chef and author states, `The Turkish cuisine is a balanced mix between the Mediterranean cuisines and the Oriental ones. After all, the country itself sits proudly just where two continents collide: Europe and Asia. But what's born from this collision is a culture that impresses, a culture that stood the test of time and still does, a country which attracts each year millions and millions of visitors eager to get a glimpse of the famous Turkish cuisine and learn more about the culture itself.'
Simply reading through this colorful and incredibly tempting book substantiates his claims. He makes creating these Turkish dishes seem simple and offers images of many of the finished products. This is a Class A recipe book by an authoritative culinary king! Grady Harp, May 14

If you have ever been to Istanbul, then you know the delights of Turkish food. However, if you have not been to the country, have no fear, the found will come to you.

The author, Bryan Rylee, has provided 101 recipes of delightful Turkish foid. Food from Turkey is a combination of Meditarrean and Asian cultures, and it shares all of the common ingredients in these cultures. He provides an Introduction to Turkish foid with an explanation of the area. The author gives us a good combination of all foods.

Common Ingredients- from tomatoes to sumac. Yes, sumac is an ingredient used.

Breakfast Foods- Turkish Crepes to Grape a Tomato Bake
