Featured Recipe: Raw Pad Thai

This asian-inspired dish is as healthy as it is delicious and it's simple to prepare. Your friends won't believe there is no pasta in this dish!

2 zucchini, ends trimmed
2 carrots
1 head red cabbage, thinly sliced
1 red bell pepper, thinly sliced
1/2 cup bean sprouts
3/4 cup raw almond butter
2 oranges, juiced
2 tablespoons raw honey
1 tablespoon minced fresh ginger root
1 tablespoon soy sauce
1 tablespoon unpasteurized miso
1 clove garlic, minced
1/4 teaspoon cayenne pepper


1)  To create zucchini noodles, slice the vegetables lengthwise then with a peeler, create long thin strands or “noodles.”  Then place the peeled noodles on plates.
2)  Slice carrots similar to the zucchini, so using a vegetable peeler, create long strips out of carrots.
3)  In a large bowl, combine bean sprouts, red bell pepper, cabbage, and carrots.
4)  In another bowl, whisk together the orange juice, almond butter, ginger, honey, miso, garlic, soy sauce and cayenne pepper.
5)  Pour at least half of the sauce into the prepped cabbage mixture then toss to coat.
6)  Top the ‘noodle’ with the mixture and remaining sauce, on each portion on the plates.

Servings Approximately: 4 | Prep Time: 30 Min | Ready In: 30 Min

Most vegetarian cook books include ingredients that I can't eat, and I wasn't expecting much when I read this book. Just to clarify, my joints, esp my knees hurt when I eat tomatoes and other nightshades...so all the recipes that include tomatoes are the first ones to get weeded out.
I always HOPE for recipes that will help me include turmuric (olena) and am so excited that there are some, especially the Ethiopian Cabbage! I love the many soup recipes, as I can make them in the blender.
There are two recipes for holiday cranberry sauces that are marvelous! And one salsa recipe that teaches me how to use the adobe sauce from the peppers, while reducing the proportion of tomatoes somewhat.
I'm going to make the all day applebutter recipe today and can't wait for the results! Thankfully the recipe calls for stevia as the sweetener.
Red lentils have the most wonderful flavor and I urge you strongly to try this recipe as soon as you can! The Pad Thai using veggies allows me to have the wonderful flavor without the traditional noodles...and calling for unpasturized miso (so I can use this product with more confidence), and the Irish Root Soup recipe is a keeper! One of the soup recipes (get the book to find which one!) calls for dried wakame, and now I can also use this ingrediant with better understanding of how much to use in a recipe and how to soak it for using in the soup. Learning how to use these new ingredients has tremendous value, and the instructions are clear and easy.
Many vegetarian cook books are completely centered around brown rice, and my ancestors were meat and potatoes folks, so the recipes in this book that use roots and squashes are good for what my genetics recognize as nourishment!
I am grateful for the innovation of pizza made from cauliflower. I am going to innovate this recipe further to adapt it to stove top rather than oven. I live where energy costs are the highest in the nation and turning on my oven costs ten dollars. There is one recipe, however, that I will make in spite of the oven requirement, and that's the pumpkin casserole which I made with coconut flour (and I also use rice flour successfully) so I appreciated the mention of flour choices in order to avoid gluten. This is very satisfying food!
It's exciting to have recipes that call for coconut oil, and the use of fresh coconut milk and fresh ginger in the curry recipe are ways to use fresh foods that have good mana/prana/chi.
I didn't plan to get this carried away, but honestly, this is the best vegetarian recipe book I've seen and I'm so happy to have it. There are many people, who, like me, have purchased cook books for one or two great recipes. You won't be sorry investing in this book. There are delicious recipes for every taste. I highly recommend it to everyone who wants ways of preparing foods that bring vibrant health and a happy palate! OH! One more thing! The Breaded Brussels Sprouts recipe...you will weep when you eat it...it's so good! I made it without the bread crumbs to avoid gluten and it worked. Also try the Giardiniera. No need to buy it any longer...you can make it now and enjoy it all the time!

I downloaded my free version and just...loved it!!!
as a nutritionist and a vegan i found the recipies very helpful because sometimes you run out of ideas as vegetable cooking is concearned but THIS book is an actual global journey of taste! you can travel from ireland to ethiopia and from india to thailand in ten pages! i totally recommend it, buzz has for another time again proved its value! thank you for everything and have a nice-cooking-day!

This is the best vegetarian cookbook I've ever come across! There's so many incredible recipes and it's super healthy. Being a vegetarian, it's sometimes hard to find variety and I use to get bored cooking at home. But this has really added some special flair to our cooking and even non vegetarians love what my husband and I cook. Highly recommended.

Have only been going meatless for a couple weeks It turns out this is much better than I thought it was going to be. Thought I was going to miss the taste of meat but these dishes are very tasty.

Awesome book! I've been a vegetarian for about 3 months now. This book has really helped me along the way. It answered most questions or concerns I had in my process. Well written and a very pleasant read!
