Oh my goodness there is so many savory recipes in this book I’m having a hard time deciding which one to try first. I love crepes so I will go with Tomato & Spinach breakfast for the first one. What a great way to start the day. They are all so healthy too. Then I’d pick French Lentil soup for lunch and Provencal Vegetable Stew. The deserts aren’t shabby either.
I especially like two things about this author.
1. She makes it easy to learn these recipes and where they originated. A lot of that I did not know before.
2. She has the health benefits down to a ‘T’ and she doesn’t want to eat our friends the animals as nor do I.
And… you can’t beat the price for all this with a stick

This book is less like a formal cookbook and more like a grandmother (who also happens to be a chef) guiding you through preparing wonderful food. Don't get me wrong, all the basics like ingredients lists, etc. are there, but included are extra touches that you don't usually expect; like lists of ingredients needed and explanations about some of the ingredients and tips. That being said, there are a ton of very appealing recipes in this book ... the first one that will be served at my house is the Vegetarian Cassoulet ... unless the Roasted Figs Stuffed with Feta Cheese gets to the table first.

NOTE: I'm not a vegetarian, but often we eat meat-free meals and entertain vegetarians. So I've got nothing against vegetarians and I appreciate a book like this that offers vegetarian options in a way that doesn't alienate me as a meat-eater.

Look at the cover! You know this cookbook will not be ordinary. I've always thought that I could easily be vegetarian if someone else would cook for me. I'm lazy. The recipes in this book inspire me! I always knew that it's good to go meatless a few days a week but I was in a rut. I like to start my day with a hearty breakfast and so far the "Scrambled Eggs with Goat Cheese, Greek Yogurt and Greens" is my favorite. BTW sometimes I eat it for dinner. Try this cookbook. The meals are delicious. You will not feel deprived. Really!

Zara has presented the most delectable cuisine imaginable, and in such new and interesting ways. I was looking for a good collection of vegetarian recipes, and this one caught my eye because I absolutely love Greek and Italian Food. (I do like French food too but I LOVE Greek and Italian) :-) I really was curious to see how she blended and treated the recipes to give them a vegetarian approach. It's funny because when you think of vegetarian, you don't immediately think of France, but who can refuse succumbing to a palatial offering of Tomato and Spinach Crepes, Provencal Potato Gratin, or Artichoke with Baked Brie Sauce? It absolutely made my day to get a fabulous White Chocolate Creme Brulee recipe! On the Italian side, I am warming up my palate with Focaccia with Lemon and Basil Eggs and later in the day with the Vegetable-Polenta Lasagna. As I move over to Greece, now I am sprinting to the store to get the ingredients to make Roasted Figs Stuffed with Feta Cheese, Greek Rice Stuffed Peppers, and (my favorite) Spanikopita. Fantastic collection, and I highly recommend this cookbook to all my friends.

Love this introduction to Vegetarian. I am a meat lover and never considered cooking vegetarian. But this cookbook and the wide array of delicious recipes has got me thinking about trying to incorporate it into my life. I've tried the Spinach Mushroom Quiche and the Italian Omelet. Both were absolutely delicious. The recipes are easy to follow. Highly recommend taking this wonderful journey into the food of Greece, Italy and France.
