The book seems to be set up to be used for education, as certain climbing jargon words are always in italics, however the author also italicizes words for emphasis so the effect is to have a whole lot of italics on every page. This would have worked better had the italics only been used for the climbing jargon (or even not at all).
I do agree that the use of italics is strange and distracting--it would improve any future editions if they were removed. Their usage is inconsistent, employed for both speaking emphasis and climbing-specific terms. The climbers' intent would have come across more naturally without them, and using them for terms is unnecessary as climbing readers will already know what they mean and non-climbing readers are not aided as there's no glossary explaining them.
