Chef Christophe Adam, much like Pierre Herme wrote the definitive book on the "Macaron",, has written the definitive book on the "Eclair"!!!. From the the recipes on the fondant and eclair pastes, the novel tastes both sweet and salty, you're sure to always find something that's pleasurable.

The intro on doughs Pates) is complete. Chef Adams instructions are really solid. The recipes are inovvative even classis are revisited. Whether they are sweet or savoury,, they are always winners!!!

As usual, all of Chef Adams recipes are terrific. maybe more than a novice's experience is required but it's a great addition to "Tartlettes" and "Eclairs!"
