This is a great cookbook for every chef, not just those concerned about health and the environment. The recipes are fantastic. Some require a bit of extra time, but that's to be expected if you want to make something special. There are photos of every recipe and the directions are easy to follow. A few unusual ingredients on some recipes. The author uses a lot of meat substitutes, but that's ok. In my opinion, buying a package of meat substitute is no different than buying a package of meat -- except obviously for the impact on the environment, and on your heart.
