Baked Taquitos de Pollo (Chicken Taquitos)


- 2 cups cooked chicken (shredded)
- 1 can (4 ounces) diced green chilies (drained)
- 1 cup cotija cheese (crumbled)
- ½ teaspoon dried oregano
- ½ onion (diced)
- ¼ teaspoon ground black pepper
- ½ teaspoon salt
- 2 tablespoons vegetable oil
- 24 piece 6-inches corn tortillas


1. Preheat oven to 425°F.

2. Combine the cheese, chilies, onion, oregano, pepper, salt, and chicken in a bowl. Toss well.

3. Using a heavy skillet, heat the oil. Cook each of the tortillas until soft. Stack and set aside. You may place a sheet of paper towel in between each tortilla to drain the oil.

4. Take about 2 tablespoons of the chicken mixture and line it across the lower part of the tortilla. Roll tightly and lay it on a foil-lined, slightly oiled baking sheet with the seams facing down. Continue until all tortillas are filled and rolled.

5. Make sure that the taquitos are adequately spaced and don’t touch each other. Lightly spritz their tops with vegetable oil and bake for 15-20 or until brown and crispy.

Author/chef Katerina Black is breaking the waters of unusual cookbooks that focus on nutrition, hearty appetites and saving time! This reviewer had the pleasure of reading (and using!) her book presented by Samuel Breeze on the Dukan Diet (that book is also highly recommended) proving that she can offer history, nutritional information and fine recipes in a vary readable manner. The same holds true for this very fine new book on MEXICAN RECIPES that can be prepared in 30 minutes or less.

As is becoming her trademark, Katerina Black opens the book with why Mexican food has become so popular, offering the `essential' ingredients (tortillas, tomatoes, beans , cilantro, corn, cumin, cerrano chilies, jalapeño peppers, cinnamon, onions, limes, rice, vanilla, and a variety of cheeses), the important add-ons (chipotle peppers (canned ), crema, chili powder, ancho chilies, masa, nopales, tomatillos, plantains, and pasilla chilies), and the special dish needs (Annatto seeds, jicama, prickly pears, chayote, tamarind pods, epazote, jamaica, and hominy).

Then come the recipes, divided into categories and accompanied by ingredients needs, preparation details, and the finishing touches. Saving time in cooking is what I am looking for so this Mexican cookbook was a joy to find. I was impressed with the breakfast, lunch and dinner recipes. My favorite ones were the egg recipes and bean recipes.Overall, this cookbook has excellent recipes in it. There was a few typos (mispelled words).
Overall, this is an authentic Mexican cookbook and I am cooking recipes from this cookbook. My rating of this is 4.4 stars. If you like to save time cooking and love Mexican foods, consider this cookbook.

Excellent book! I live in Tex-Mex country with some outstanding Mexican restaurants here. There is also a couple that have regional food from Mexico.

I have prepared many of the recipes in this book. I made a big meal for family one mothers day. This has some great meals in it for you!

Big flavor! Big yums will be heard! Enjoy the taste delights!

My mouth salivated as I read the recipes. I lived in Mexico City for 2 years and the author is spot on great authentic recipes. Wish I lived somewhere I could get some authentic ingredients to make Chilaquiles or Nopal salad.

I am vegetarian and diabetic. I carefully review cookbooks to ensure there are enough suitable recipes before buying. This one is! in spades! Jicama Salad is first on my list to try as I have all the ingredients. There are also several salsa recipes, including one in a fish recipe.
