Apple, Cinnamon and Walnut Cake

Every family has its recipe for a favorite apple cake. This one is attractive, perfumed with cinnamon, and has the added treat of crunchy walnuts.

5 large baking apples, peeled and cored
juice of half a lemon
2 cups flour
1 teaspoon cinnamon
1 tablespoon baking soda
pinch of salt
3 eggs
1 cup sugar
3/4 cup oil
5 tablespoons brandy or calvados
1 teaspoon vanilla extract
3/4 cup walnuts, coarsely chopped

For dusting
2 tablespoons sugar
1 tablespoon cinnamon

   1. Preheat the oven to 350°.

   2. Cut 3 apples into a ½ inch dice. Slice the remaining 2 apples into 8 wedges each, sprinkle with lemon juice and set aside.

   3. Sift the flour with cinnamon, baking soda and salt.

   4. Using an electric mixer, beat the eggs, sugar, brandy and vanilla extract until pale and thick, about 8 minutes.

   5. Lower the speed and gradually add the oil and then the flour to the egg mixture.

   6. Fold in the diced apples and chopped walnuts and pour the batter into a well-greased 10" springform pan. Arrange the apple wedges in the center of the cake in a flower pattern. Combine sugar and cinnamon and sprinkle on top.

   7. Bake for 60-70 minutes until the cake is golden and a toothpick comes out dry with a few crumbs adhering.

   8. Cool for 10 minutes, release from pan and cool completely on a rack.
Cooking Time: 1 hour and 40 minutes (including baking time)

I am a very big cooking book enthusiast, and I keep on buying cooking books although this day you can find ANY recipe on the Internet, because I like reading them, and looking at the photos, and put on little stick it notes on the pages I love, hoping some day I'll find the time to make that recipe.
If You are like me - you are so going to enjoy this book!

It's very beautiful, All chrome pages, with mouthwatering photos of the featured recipes, and many more photos of the people and places of Israel. It also contains explanations about the different styles and cuisine that together assemble the Taste of Israel. You'll find home cooking recipes, and recipes from fashionable restaurants, traditional cooking from Eastern Europe, Morocco, Yemen or Iran alongside contemporary Mediterranean food.

I am an Israeli currently living in the states, and this is a very authentic, fun and beautiful book that totally made me homesick. I bought it as a gift to an American friend of mine, and read it cover to cover before giving it to her.
After that I went ahead and bought myself a copy as well.
She loved it as well - and she told me she would try and make the KUBE - a traditional Jewish Iraqi recipe she never got the chance to learn personally from her grand mother.

I purchased this cookbook because it is the only cookbook that I could find that included a recipe to make Schwarma without mixing milk and meat. The recipe was well printed, directions were clear, and the product was amazing. Recipes have both metric and non metric measurements. I fed 300 people and requests for the recipe are still coming in. The Title of the Book is PERFECT. "The Book of New Israeli Food: A Culinary Journey" is just what defines this product. Living and visiting in contemporary Israel, means experiencing food from a variety of cultures and countries. The photography brings you through a sensory journey of sounds, smells, and sights, as you wet your appetite with the promise of foods from the market and the Mediterranean, with respect to the uniqueness of Israeli breakfasts, salads, the bread, and the propensity of olive oil. This artistic book is the first Israeli cookbook that I have seen that honors the countries, cultures, holidays and stories of all Israeli citizens. Foods, recipes, faces, and stories of Arab Israelis in the same binding as those of Ashkanazi and Sephardic Jewish Israelis. The Holiday chapter includes recipes of Rosh Hashana, Shavuot, and Ramadan amongst others. More than a culinary journey, it is also a photographic journey and an emotional journey through the land of Israel and its' "tastes". It may have started as a search for Schwarma coming out of MY kitchen, however the first book I purchased was gifted as a "coffee table book" because it was so amazingly artistically beautiful with an amazing message. I bought this book on the recommendation of a friend and I couldn't be more pleased with it. It makes for a gorgeous coffee table book; the photographs are beautiful and the book is also full of insightful details about Israeli cuisine and lifestyle. Unlike some coffee table type cookbooks, this one also has amazing recipes which are absolutely delicious! I've tried making several of the recipes in this book, and they've all come out perfect. I highly recommend the Mediterranean Pashtida; I've made this one several times for friends and it has become highly requested. The tahini cookies, shakshuka, and ptitim cassrole were also delicious. I can't wait to try the rest of the recipes in this book. I also appreciated that the author saw fit to include recipes enjoyed on Ramadan.

This is a beautiful book, with nice stories, striking photography, and a good mix of recipes that shows lots of sides of Israel. I haven't been yet, but this book more than any other has made me more interested in visiting and actually feeling connected. Everything comes down to food in my world, and this cookbook has helped me relate and feel engaged. I enjoy it a lot!

Gorgeous pictures, a large variety of recipes from both Jewish, and Arab cultures. Lots of staple foods, and history of importance of feasts and holidays and why they prepare certain foods. I bought this in America, and now live in Israel. Great book, lovely to cook with as well as have in your book collection. Also great to have on your coffee table.
