Présentation de l'éditeur

Chef David Waltuck calls Chanterelle 'a fantasy of a restaurant, dreamed up by a little, food-loving kid, that somehow, magically, came true.' For over 28 years and from two different New York City locations, Chanterelle has broken the boundaries of French cooking, winning over such fans as Gael Greene, Richard Avedon, Keith Haring and Malcolm Forbes along the way. Now, co-owner and co-founder Waltuck invites you into his bustling kitchen with a sumptuously illustrated cookbook chockfull of the recipes that have made Chanterelle a destination restaurant of international stature. From their signature Seafood Sausage and other fish and shellfish creations to salads and first courses, poultry and rabbit, meat and game, side dishes and desserts, the book simply overflows with nouvelle cuisine classics. A must for anyone who has ever had the pleasure of dining there - and perfect for professionals and the armchair market - Chanterelle is a cookbook to savour.

I am pleased to own this cookbook and to be reminded of the wonderful meais I enjoyed in this very fine establishment. My office was across the street from them, and I watched with fascination as the building they were in, I think it was called the New York Mercantile Building, underwent a complete and very patient major restoration. It took a while for the ground floor space to be rented out, and we were surprised that the tenant was a five star restaurant. Every visit to Chanterelle was exquisite and very memorable. I hope to re-create some of the dishes with this book. Thanks.

AMAZING book!!! By just reading the story in the beginning I could tell this was going to be an fantastic book. Waltuck brings you into the world of Chanterelle, a French restaurant located in New York City. I have never been there myself, but just reading his introduction I was placed in his shoes and was ready to try his daunting, yet simple recipes.

As for the recipes, Waltuck could not have one a better job of explaining his recipes and how to make the delicious servings of food. As I would read his excerpts, whether about the kind of food to buy or about his experiences with Chanterelle, they not only warm the soul but also inspire the reader to do their best to recreate his recipes. While I must admit that some of the recipes had ingredients that were foreign to my kitchen, he provides some places he shops at. Granted he is a professional chef and restaurant owner, I found it easier to go to stores like Whole Foods Market and occasionally go to other (cheaper) websites for the ingredients. Other than that, the recipes were a lot of fun. I would very much recommend this book to anyone who wants to create elegant yet simple French food and have an inspirational time doing so.

A beautiful book with great images and wonderful recipes. The now-departed 5 star restaurant lives on in this book by Chef Waltuck.
