Christian B. Allan, PhD, has performed research on the chemistry of minerals, biochemistry, and nutrition at Lawrence Berkeley Laboratories, the University of Massachusetts in Amherst, and the National Institutes of Health. He currently works for a biotechnology company in Maryland.
Wolfgang Lutz, MD, has studied low-carbohydrate nutrition on thousands of patients in his clinical practice. He has had great success in alleviating their ailments and building a comprehensive theory to explain why low-carbohydrate diets improve human health.

Ce qui fait la grande originalité de ce livre c'est qu'il valide scientifiquement et démontre que les aliments les mieux adaptés aux mitochondries humaines, ce sont les graisses et les protéines !
Ce livre édité par Mc Graw Hill, l'un des éditeurs américains le plus "sérieux" en matière scientifique est co-écrit par Wolfang Lutz, médecin et père de ce type de régime qu'il a appliqué dans sa clinique sur plus de 10 000 patients allemands ainsi que Christian Allen, un grand chimiste, biochimiste et nutritionniste américain qui en fournit merveilleusement sa justification scientifique.
don't waist your time and money, some of it might be right, lots of it is wrong! Shoddy explainations and reasons, and so on.....they do include at the end comparison with Primates and so on...but they argue that the mitochondria needs fat fuel...so we need to eat meat and fat...so what about the mitochondrias of Cows ? Primates ? and all Plant eating animal...just for that reason they are full of it!!!

ok this MD, but never trust MD, they don't know much lol, might have had some success in help patient by scraping Cereals totally, which is good, i don't agree with all 'sugars' like Fruits, i believe we need it! too much proteins seems to be no good too, but they wrong all of this in this book, just by saying it...by a twist of 'oh that's not important' or 'there is no fact'....i don't find it as 'scientifically ethical' like some alternative authors could be. They spent time explaining the ATP mecanism when this been disproven by Ling (explained by Gerard Pollack in his videos) ok this is recent news for the 4th phase of water...but what else could be wrong in what they are explaining!!!

In my humble opinion "Life Without Bread" ("Leben Ohne Brot") is a must read for any IBD and Crohn's patient! He provided real data and statistical results from his private practice and years of personally conducted clinical research. As far as I know it is the ONLY published research to date on using the high-fat, low-carb diet in this context and it is great shame that Life Without Bread took so long to be translated into English. He explains autoimmune disease very simply and gives one hope of remaining in remission by eating less than 72 carbs a day.
This should be required reading for folks with other autoimmune diseases including MS, rheumatoid arthritis, asthma and diabetes. The greatest tragedy of WWII was that all the magnificent research done by the German doctors was forgotten or debased. At the same time, the Americans took over the field and erroneously promoted low-fat, high-carb diets, the use of Poly Unsaturated Fatty Acids and high fructose corn syrups, while often receiving financial benefits from it while our population becomes increasingly obese and suffers from cancer, heart disease and a variety of other ills.
Also, the chapter on heart disease effectively debunks the phony widely held notion that saturated fats and cholesterol from animal foods cause this condition. The authors explain the physiological benefits of saturates and simultaneously point out the flawed reasoning behind the Lipid Hypothesis. Buy this book today, as it will save your health and your life.
PS As of November, 2011 I gave up eating all wheat products and went off of Lialda in March, 2012. I have only had one minor flare-up during the summer and that was because I started eating too much sugar. I cut that out and feel really fine again. I believe that UC sufferers must abstain from all wheat products which is not something that Dr. Lutz really discusses.
It is great shame that Life Without Bread took so long to be translated into English.
The Thesis Statement : Reduce daily carbohydrate intake to 72 grams / day for better health
His approach to carb restriction will seem overly simple to most people.
It is: reduce carbs to 72 grams/day. That's all. Three meals; 24g per meal. There's no discussion of "good" and "bad" carbs; no discussion of which fats to prefer. Just 72g/day. If that doesn't work; reduce it a bit more. There's also some commentary about the need for some people to reduce gradually. But anyone hoping for a "new twist" or variation on low-carb won't find it in this book. I think Dr. Lutz understood that simplicity helps people to stay on the diet. Also, restricting carbs more than actually necessary to yield positive results would make compliance more difficult. To most people here, 72g/day will seem like a very generous amount of carbs.
I read Lutz's Life Without Bread when I was trying to better understand why eating the way the health and diet authorities advised (low fat/high carb) resulted in weight creep, and why in five months of simply eating low carb/high fat shaved the excess "bread" pounds off easily without feeling starved. That book was definitely a factor in my paradigm shift.

Dr. Wolfgang Lutz, who has died aged 97, was a doctor who investigated the links between nutrition and health. Concerned over the dramatic escalation in what he termed the "diseases of civilisation", he developed the idea that humans are insufficiently adapted to the comparatively recent high-carbohydrate foods of the Neolithic age. He suggested that a diet similar in composition to that of the Ice Age hunter-gatherer might be more suitable to our genome. He recommended a "modern Paleolithic diet", unrestricted as to protein and fat, yet low enough in carbohydrate to be compatible with our genetic inheritance.
Wolfgang further surmised that the pattern of our hormonal secretion must be tuned to the largely animal diet of that distant epoch. He demonstrated clinically how today's comparative overload of carbohydrate requires compensatory adjustments in our hormonal secretions - primarily in insulin, but also in thyroid, adrenal, growth and sex hormone levels. Wolfgang was the first to describe how these often prolonged disturbances in hormonal regulation could underlie many of our modern diseases.
He wrote up his findings in books and more than 60 articles. His Leben Ohne Brot (1967) is now in its 16th edition and was translated as Dismantling a Myth: The Role of Fat and Carbohydrates in Our Diet (1986). Life Without Bread (2000), written jointly with Christian Allan, was published in the US.
The son of a general practitioner, Wolfgang grew up in rural Austria; and read medicine at the universities of Innsbruck and Vienna. After graduating, he joined the staff of the Second University Medical Clinic, in Vienna, but the second world war interrupted his research. Focusing then on the medical aspects of aviation, Wolfgang was able to determine that, when pressurised cabins fail at high altitude, it is a sudden drop in pressure that causes pilots to lose consciousness. Working on small animals, he invented a prototype space suit, which automatically inflated the moment oxygen pressure dropped by a critical amount.
Wolfgang, unwilling to carry out experiments on humans, as he was requested to, changed field and a second remarkable discovery followed. Spotting that, when emerging from a frozen state, the brain woke earlier than the heart, Wolfgang developed resuscitation techniques that helped save the lives of pilots rescued from freezing Arctic waters. He hoped his technique might also help in heart surgery.
After the war, he rejected an offer to work in space technology in the US; then, his name having been cleared, he attended the Nuremberg trials as a witness and, in 1947, he became a practising physician. In 1968, he moved into private practice in Salzburg, where he remained until his "retirement" in 1992. In later years, he divided his time between Graz and London. Among other honours, he was made chancellor of Dublin Metropolitan University in January 2007 and that May was given the freedom of the City of London.
