I tried some of these recipes and they taste amazing.

This is a very well done collection of Top 30 recipes, the recipes are healthy, easy to cook and more importantly are delicious. There is one plus point to this cookbook is that every each of the 30 recipes is accompanied with an attractive and colored photograph of the finished recipe.

The directions for the recipes are step by step and explain the whole process of cooking in easy to understand words. The ingredients for each of recipe are very clearly written. Weight and measurements are precise and accurate. You don’t have to think over how much you need to put in a specific recipe.
There are recipes which you might think will think whole day but the author has created short-cuts for such recipes.

You cannot go wrong with such nutritious collection of recipes in this particular cookbook. You don’t have to search for mouth-watering and recommended recipes for your health other than this cookbook because this cookbook has covered all of it.

I received a copy of the book in exchange for an honest review.

Ruby Cooper's Vegan Sandwiches came along at just the right time. I have decided to follow the Vegan Before 6 way of eating and eating vegan for lunch was stumping me. I usually eat leftovers for lunch, but if I'm eating vegan until dinnertime that's often not a lunchtime option. Salads are great, but I get bored with them quickly. The other choice, making sandwiches with vegan meat analogs doesn't appeal either. This book is full of great ideas that can be built upon to make your own delicious sandwiches and wraps. Some of the combinations are unusual, but sound delicious...like spinach and coconut. Others are fairly standard if you're already used to eating vegan style, like hummus with tomatoes and cucumber. With all the great choices, you'll soon be able to fill your lunch box with healthy choices that will satisfy your appetite and palate.

For those who have adopted a vegan regimen, author Ruby Cooper offers fifty vegan sandwiches that utilize whole grains and minimize carbohydrates, and include vegan protein sources (vegetables, legumes, beans, and nuts). Some sandwiches use all raw ingredients, and some involve some baking or grilling. The recipes use a variety of herbs and spices to jazz up the taste. Most, but not all, of the sandwiches have accompanying color photos of the ready-to-eat sandwich.

This is true vegan food - no dairy products (cheese, butter, eggs, etc.) are used. I would miss cheese most of all, but I have to say that some of the sandwiches are very appealing. I was surprised to see one of my own favorites - a radish sandwich - but it looks even more tasty than the ones that I make. The Roasted Tomato sandwich is one that I definitely want to try. Using roasted cherry tomatoes, it's a very simple sandwich to make, but it looks yummy.

There's something for just about everyone here, even carnivores. The only thing I miss is nutritional information (calories, fat, protein, carbohydrates, and fiber), but with sandwiches that have the home chef's choice of sandwich size and bread types, it would be difficult to standardize that.

Ruby Cooper has gone out of her way to deliver a definitive book on how to make vegan sandwiches irresistible. The introduction restates what most of us have learned about the parameters of Vegan Diet and then proceeds to jump into the best ingredients and follows that with some of the beautifully photographed and described recipes for Vegan Sandwiches.

The reassuring aspect of Cooper's presentation is not only in the wide variety of sandwich ideas is her reminding us that these creations are low in fat, help the diet conscious cooker and eater, keep us feeling healthy as well as satisfied, help detox the body, and gives us the upper hand in keeping health available in a hurry to match busy lifestyles. Just take out one of these creations form your lunch box at work and watch the envious eyes.

Each sandwich is thoroughly described, with preparation tips, and is accompanied by a color photograph of the end product that is like a banner advertisement. This is a well-designed and excellent `cookbook' without the cooking! Happy Sandwich! Grady Harp, January 14

The book that forever changed how I view sandwiches I agree with other reviews that mention some of the recipes are a bit complex, but that was fine with me. I just wanted something different to spark some ideas. I got this as a Kindle book and that's fine. This is another cookbook I purchased because I was hell-bent on finding a certain recipe for something and....wait for it.....I had a gift card to Amazon. Anyway, I was not disappointed.
