First, a word about the title: The author does not mean "vegetarian" in its strictest sense, with ingredients being plant-based only. The recipes in the book do use dairy products, including milk, certain cheeses, and eggs.

For my wife and me, one of our favorite neighborhood restaurants is named the Mediterranean Grill, so I'm already familiar with some of the book's recipes. The Mediterranean Grill, however, includes some Middle Eastern foods that are not well represented in the book, although the title does make it clear that the recipes are from France, Italy, and Greece. The recipes look very tasty, and I'm definitely interested in trying some of them.

Each recipe includes a list of kitchen utensils required, the ingredients, and preparation directions. Nutrition information is not included, although it's not too difficult to calculate the calories of fat, protein, and carbohydrates if you need that information. Some color photographs of the finished dishes would have been a nice touch, but they're not essential.

All things considered, this is an excellent cookbook that's earned a place on my Kindle. Even for a non-vegetarian like myself, it's no hardship to give up meat for these tasty-looking dishes. My first dish to try will be the Provençal Savory Chickpea Pancakes from France. Made from chickpeas, they look a lot like the falafel that I love so much.

Oh my goodness there is so many savory recipes in this book I’m having a hard time deciding which one to try first. I love crepes so I will go with Tomato & Spinach breakfast for the first one. What a great way to start the day. They are all so healthy too. Then I’d pick French Lentil soup for lunch and Provencal Vegetable Stew. The deserts aren’t shabby either.
I especially like two things about this author.
1. She makes it easy to learn these recipes and where they originated. A lot of that I did not know before.
2. She has the health benefits down to a ‘T’ and she doesn’t want to eat our friends the animals as nor do I.
And… you can’t beat the price for all this with a stick

Zara has presented the most delectable cuisine imaginable, and in such new and interesting ways. I was looking for a good collection of vegetarian recipes, and this one caught my eye because I absolutely love Greek and Italian Food. (I do like French food too but I LOVE Greek and Italian) :-) I really was curious to see how she blended and treated the recipes to give them a vegetarian approach. It's funny because when you think of vegetarian, you don't immediately think of France, but who can refuse succumbing to a palatial offering of Tomato and Spinach Crepes, Provencal Potato Gratin, or Artichoke with Baked Brie Sauce? It absolutely made my day to get a fabulous White Chocolate Creme Brulee recipe! On the Italian side, I am warming up my palate with Focaccia with Lemon and Basil Eggs and later in the day with the Vegetable-Polenta Lasagna. As I move over to Greece, now I am sprinting to the store to get the ingredients to make Roasted Figs Stuffed with Feta Cheese, Greek Rice Stuffed Peppers, and (my favorite) Spanikopita. Fantastic collection, and I highly recommend this cookbook to all my friends.

Author/chef Zara Murray states `I have the Hari Krishnas to thank for converting me to vegetarianism. That was over 30 years ago and I can honestly say that I am extremely healthy and I have plenty of energy. I can't remember when I visited the doctor last. I'm not fanatical about not eating meat; I do eat chicken or fish when out, for convenience. I am not going to take a hard line here and tell people they should not eat meat - that is a personal decision. However, I do think that it is encumbent on us humans (as the intelligent species on the planet) to treat animals humanely and with respect and dignity. However, vegetarianism is not just about deleting meat - it is a great way to allow your taste buds to really come alive. There are so many recipes available to us now, from so many different cultures, that including some vegetarian recipes into your schedule will give you a sense of adventure if nothing else.'

Zara opens her book with some information abut the Mediterranean countries that are the source of her recipes: Albania, Algeria, Bosnia, Croatia, Egypt, France, Greece, Herzegovina, Israel, Italy, Lebanon, Libya, Monaco, Montenegro, Morocco, Slovenia, Spain, State of Palestine, Syria, Tunisia, Turkey. So it is not just the France/Italy/Greece trio - she expands our horizons geographically as well as gastronomically. She also take the time to address the `cheese dilemma' - whether or not cheeses (and which ones are at the top of her list) are vegetarian.

The rest of this delightful book focuses on recipes - breakfast, lunch and dinner recipes from France (e.g. Apple Brie Omelet, Herbed Tomato Tart, Vegetarian Cassoulet, Lemon Almond Soufflés are examples), from Italy (eg. Focaccia with Lemon and Basil Eggs, Pasta Primavera, Pasta Putanesca, Terrone Semifreddo are examples), and Greece (e.g. Roasted Figs Stuffed with Feta Cheese, Jackfruit Gyros, Greek Rice Stuffed Peppers, Baklava are examples). Each recipe is accompanied by the utensils needed, definitions of the ingredients, method of preparation, and how to assemble for presentation. The information is clearly placed before us and the process is as simple as anyone could make it. This is a top-notch book of healthy delicious recipes. Highly recommended. Grady Harp, May 14

This book is less like a formal cookbook and more like a grandmother (who also happens to be a chef) guiding you through preparing wonderful food. Don't get me wrong, all the basics like ingredients lists, etc. are there, but included are extra touches that you don't usually expect; like lists of ingredients needed and explanations about some of the ingredients and tips. That being said, there are a ton of very appealing recipes in this book ... the first one that will be served at my house is the Vegetarian Cassoulet ... unless the Roasted Figs Stuffed with Feta Cheese gets to the table first.

NOTE: I'm not a vegetarian, but often we eat meat-free meals and entertain vegetarians. So I've got nothing against vegetarians and I appreciate a book like this that offers vegetarian options in a way that doesn't alienate me as a meat-eater.
